It was too late for Dobby.
I see no harm in trying to save Dobby with the Dittany.
Story-external answer: Rowling wanted Dobby to expire pathetically for plot
reasons ;-p
Story-internal answers: maybe Hermione didn't get there in time (she and Ron
are in Shell Cottage, presumably unaware that Dobby is injured, when Harry
is bending over the elf on the beach).
Maybe essence of Dittany doesn't actually heal stab wounds. If it simply
closes the surface of the wound, it would be like putting in stitches --
fine for shallow injuries, but no good against internal punctures...
Maybe Hermione is in a state of shock after their experiences in Malfoy
Manor and doesn't think of the possibility until later -- she has been
undergoing torture, after all, which doesn't help to make you quick-thinking
and resourceful :-(
